- to open a buffet restaurant that is equipped to handle large volumes, with plenty of choice, in a natural surrounding that is hybrid in usage with no mass perception.

Rita it really is "perception de masse", singular. If you look at yr examples, you will notice they are talking about "the way you perceive masses", not mass perception. Type in "perception de masse" in Google and you will get the mass perception meant here.

it just means it's unique and people don't go there with expectations/brand images already implanted in their minds. In other words, they don't go in with any preconceived ideas about what they are going to experience.

I think it means that it is not perceived the same way by the public (mass). Sole people might go there for one reason and others for another reason.

hybrid in usage - serving many different types of food styles (grilled, ethnic, salads, sandwiches, hamburgers) for children (large volumes means not very high quality IMO)
